Historia Domaine du Castel sięga lat 70-tych, kiedy Eli Ben Zaken wyemigrował z rodziną z Mediolanu do Izraela. Kupił niewielki kawałek ziemi w pobliżu Jerozolimy i zaczął spełniać swoje marzenie o pracy na roli, sadząc sad i hodując kurczaki. W 1988 roku Eli postanowił zasadzić pierwszą współczesną winnicę na Wzgórzach Judejskich, a w 1995 roku wypuścił pierwsze 600 butelek swojego Grand Vin dojrzewającego w dębowych beczkach, które sam sprowadził z Francji.
Grand Vin Eliego szybko zyskało miano kultowego, a butelka została nawet wysłana do szefowej działu win w domu aukcyjnym Sotheby's, Sereny Sutcliffe, która pochwaliła wino. Wyprodukowane w klasycznym stylu Bordeaux, Grand Vin jest mieszanką winogron Cabernet Sauvignon, Merlot, Petit Verdot i Cabernet Franc, które są starannie wyselekcjonowane z najlepszych winnic Eli.Po winifikacji młode wino dojrzewa w dębowych beczkach przez 16 miesięcy, a następnie przez kolejne cztery miesiące w betonowych zbiornikach. Rezultatem jest niezwykle złożone czerwone wino, które szczyci się pełnym ciałem, bogatymi smakami ciemnych owoców i bardzo długim finiszem. Choć wino to jest przystępne już teraz, ma doskonałe możliwości starzenia i będzie się rozwijać i ewoluować przez następną dekadę.

Made in the classic Bordeaux style, the Grand Vin is a blend of Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc grapes which are carefully selected from Eli’s top vineyards. Following the vinification the young wine is aged in oak barrels for 16 months followed by a further four months of maturation in concrete tanks. The result is a remarkably complex red which boasts a full body, rich dark fruit flavours and a very long finish
