Wino zostało wprowadzone do Chile przez hiszpańskich osadników w 1500 roku. Chile to wąski pas ziemi biegnący wzdłuż Andów, który oferuje ogromną różnorodność klimatów i stylów winiarskich. Kluczowe regiony winiarskie Chile znajdują się głównie w Dolinie Centralnej, w pobliżu stolicy Santiago. Obejmują one dolinę Maipo, nazywaną "Bordeaux Chile", produkującą najsłynniejsze chilijskie wina, a także doliny Aconcagua i Colchagua, które są znane z potężnych win Cabernet Sauvignon i Carmenere.
