    Części piwnicy Tollot-Beaut mają około 250 lat, a sama domena sięga późnych lat osiemdziesiątych XIX wieku, kiedy François Tollot po raz pierwszy zaczął sadzić winorośl w Chorey-lès-Beaune. Kilka pokoleń później rodzina stała się jedną z pierwszych w Côte d'Or, która zaczęła butelkować własne wina pod swoim nazwiskiem i eksportować je do USA. Dziś posiadłość jest nadal własnością rodziny Tollot i jest prowadzona przez kuzynów Nathalie, Jean-Paula i Oliviera.Rodzina posiada łącznie 24 hektary w Chorey-lès-Beaune, Savigny-lès-Beaune, Beaune i Aloxe-Corton i produkuje szeroką gamę win, od podstawowych Bourgogne po Grand Cru. Ich klasyczne Chorey-lès-Beaune pochodzi z trzech wybranych działek, które są uprawiane ekologicznie i sadzone na glebach wapiennych, żwirowych i gliniastych.Każda działka ma inną charakterystykę, przy czym pierwsza działka po południowej stronie wioski daje bardziej perfumowane owoce, które są zwykle zbierane wcześniej.
