Delikatne tłoczenie, fermentacja malolaktyczna z rodzimych drożdży i klarowanie wina przez osadzanie - wszystko to przyczynia się do produkcji najwyższej jakości, bardzo interesujących win.
    Stosując tradycyjne metody produkcji wina z Burgundii, winogrona były zbierane ręcznie na różnych etapach, aby zapewnić optymalną dojrzałość. Owoce odszypułkowano i poddano fermentacji w małych kadziach fermentacyjnych. Po fermentacji wino umieszczono w małych dębowych beczkach, z czego 30% stanowił nowy dąb.
