Posiadłość rozciąga się na około 98 hektarach winnic, w trakcie przekształcania w rolnictwo ekologiczne i znajduje się w różnych apelacjach Beaune i Chalon.

    Winogrona Chardonnay pochodzą z pojedynczej winnicy monopolowej położonej na wysokości około 350 metrów, w gminie St Aubin, na kamienistej glebie wapiennej. Tutaj winorośle, mające około 30 lat, cieszą się ekspozycją południowo-południowo-zachodnią. Winifikacja odbywa się w beczkach, a gotowe wino leżakuje przez 12 miesięcy w beczkach (15% nowych).

    Clos de la Chaise Dieu Monopole to Chardonnay o jasnym wyglądzie i złotożółtych odcieniach. W nosie ujawnia aromatyczny bukiet białych kwiatów, dojrzałych owoców (jabłko, gruszka i cytrusy) oraz lekkie nuty ziołowe. Na podniebieniu jest żywe i ma dobrą konsystencję.
