    Eyal Rotem założył Clos de Gat w 1998 roku we współpracy z Maison Sichel, domem negocjacyjnym z siedzibą w Bordeaux. W ciągu ostatnich lat udało mu się stworzyć jedną z najbardziej udanych butikowych winiarni w Izraelu z około 19 hektarami winnic obsadzonych międzynarodowymi odmianami. Aby pokazać lokalny terroir i naturalne piękno winogron, Rotem stosuje minimalną interwencję w winiarni i zbiera winogrona ręcznie.
