    Domaine Francois Carillon został założony w 2010 roku, kiedy Francois opuścił rodzinny biznes i podzielił się winnicami ze swoim bratem. Dziś jego gospodarstwo rozciąga się na ponad 16 hektarach, gdzie główną uprawą jest Chardonnay, z niewielkimi ilościami Pinot Noir i Aligoté.

Pomysł narodził się w 2021 roku, po trzech latach wiosennych przymrozków w Burgundii, które spowodowały straty w uprawach. Szukając innych miejsc do produkcji swoich win, Francois Carillon rozpoczął projekt Cap au Sud. Winogrona pochodzą z ponad 35-letniej winnicy położonej około 250 metrów nad poziomem morza u podnóża Montagnac, na glebach gliniastych i wapiennych. Fermentacja odbywa się w dębowych beczkach, a gotowe wino leżakuje w beczkach przez co najmniej rok, zanim zostanie zabutelkowane zgodnie z cyklami księżycowymi, zgodnie z zasadami biodynamiki.
